StrawberryMangoSlushiesPinterestWinter weather typically makes me gravitate toward warm cups of coffee in heavy mugs and steaming Earl Grey in pretty teacups. But every once in a while, usually as spring approaches, I’ll crave something fresher. By this time of year, I’m just so ready for blue skies, new growth, and fresh locally grown produce!

When I used to work with my dad at one of his home construction sites, I loved stopping at a gas station on the rare occasion to get a slushy. After working for hours in Florida’s hot, humid summer weather, it was a welcome treat. I haven’t stopped for a slushy in years, but I’ll always have fond memories of them- despite knowing they contain artificial dyes and flavors and loads of sugar! ;)

Our local grocery store had mangos for $0.50 each the other day, so I picked up 3 and knew I wanted to do something fun with them. Slushies just seemed like the perfect fate for those mangos. I started experimenting with ingredients we had on hand, and after a couple of tries, I was loving the recipe!

Plus, these strawberry mango slushies are perfect for Valentine’s Day because… they’re a beautiful red color. Yup. But seriously, they have a nice mix of sweetness and tartness, and are definitely the refreshing reprieve I was hoping for! Unlike gas station slushies, there are no added sweeteners; the fruit and fruit juice are the only sources of sugar. The main flavor that comes through is strawberry, but the mango gives a nice sweetness to the drink.

Strawberry Mango Slushies

Serves 2

Ingredients:

  • 1 mango, peeled and seeded
  • 2.5 cups frozen strawberries
  • 1/4 c. cranberry juice (no sugar added)
  • 1/4 c. coconut water

Directions:

  1. Place all ingredients in a high-speed blender and blend on high until the desired consistency is achieved.
  2. Pour into a glass and don’t forget the straw! What’s a slushy without a straw?!
